    • 1 teaspoon chili powder
    • ¾ teaspoon salt
    • Juice of 1 lime
    • 15 ounces cans low sodium black beans, drained and rinsed
    • 3 cups chicken, shredded (like rotisserie or chicken breast)
    • ½ cup cotija cheese (or feta), crumbled
    • Cooking spray (I use Misto)

    Instructions:

    1. Preheat your oven to 375°F (190°C). Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes.
    2. In a large bowl, combine the diced tomatoes, avocados, red onion, cilantro, cumin, chili powder, salt, and lime juice. Mix well to combine.
    3. Heat the black beans in a saucepan over medium heat until warm. You can add a bit of water or chicken broth for extra flavor if desired.
