- 8 tostada shells (or corn tortillas)
- 3 medium tomatoes, diced
- 4 medium avocados, diced
- 3 tablespoons red onion, finely chopped
- ¼ cup cilantro, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ¾ teaspoon salt
- Juice of 1 lime
- 15 ounces cans low sodium black beans, drained and rinsed
- 3 cups chicken, shredded (like rotisserie or chicken breast)
- ½ cup cotija cheese (or feta), crumbled
- Cooking spray (I use Misto)
- Preheat your oven to 375°F (190°C). Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes.
- In a large bowl, combine the diced tomatoes, avocados, red onion, cilantro, cumin, chili powder, salt, and lime juice. Mix well to combine.
- Heat the black beans in a saucepan over medium heat until warm. You can add a bit of water or chicken broth for extra flavor if desired.
- Take the tostada shells out of the oven and spread a layer of black beans on each shell.
- Top the beans with the shredded chicken, then add the tomato and avocado mixture.
- Sprinkle crumbled cotija cheese over the tostadas.
