Garlic Butter Shrimp and Asparagus Skillet


Ingredients:

- 1 lb (450g) shrimp, peeled and deveined

- 1 bunch asparagus, trimmed and cut into 2-inch pieces

- 3 tablespoons butter

- 4 garlic cloves, minced

- 1 lemon, juiced and zested

- 1 teaspoon paprika

- Salt and pepper to taste

- 1 tablespoon olive oil

- Fresh parsley, chopped (for garnish)

- Optional: Crushed red pepper flakes for some heat


Instructions:


1. Prepare the Shrimp and Asparagus:

   - Rinse the shrimp and pat them dry with paper towels.

   - Trim the asparagus and cut into 2-inch pieces.


2. Cook the Asparagus:

   - In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

   - Add the asparagus pieces and sauté for about 4-5 minutes until tender but still crisp.

   - Season with a little salt and pepper, then transfer to a plate and set aside.


3. Cook the Shrimp:

   - In the same skillet, add the butter and let it melt over medium heat.

   - Add the minced garlic and sauté for about 1 minute until fragrant.

   - Add the shrimp to the skillet in a single layer.

   - Sprinkle with paprika, salt, and pepper.

   - Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque.


4. Combine and Finish:

   - Add the cooked asparagus back to the skillet with the shrimp.

   - Pour in the lemon juice and zest, stirring everything to combine well.

   - Cook for another 1-2 minutes until everything is heated through and well mixed.

   - Adjust seasoning with salt and pepper as needed.


5. Serve:

   - Garnish with chopped fresh parsley and, if desired, a pinch of crushed red pepper flakes for some heat.

   - Serve immediately with a side of rice, pasta, or a fresh green salad.


Tips:

- Make sure not to overcook the shrimp to keep them tender and juicy.

- You can substitute the asparagus with broccoli, green beans, or your favorite vegetables.
