Easy Dinner Recipes
1. Spaghetti Aglio e Olio
Ready in: 20 minutes | Serves: 2
Ingredients:
- 200g Spaghetti
- 4 tbsp Olive oil
- 4 Garlic cloves (sliced)
- 1 tsp Chili flakes (optional)
- 2 tbsp Parsley (chopped)
- Salt to taste
- Parmesan cheese (optional)
Instructions:
- Boil spaghetti in salted water until al dente. Reserve ½ cup of pasta water.
- Heat olive oil in a pan over medium heat. Add garlic and chili flakes, and sauté until garlic is golden.
- Toss in the cooked spaghetti, reserved pasta water, and parsley. Mix well.
- Serve with grated Parmesan cheese, if desired.
2. Vegetable Fried Rice
Ready in: 25 minutes | Serves: 2-3
Ingredients:
- 2 cups Cooked rice
- 1½ cups Mixed vegetables (carrot, peas, capsicum)
- 2 tbsp Soy sauce
- 2 tbsp Oil
- 2 Garlic cloves (minced)
- 2 tbsp Spring onions (chopped)
- Salt and pepper to taste
Instructions:
- Heat oil in a large pan or wok. Add garlic and stir-fry for 30 seconds.
- Add mixed vegetables and sauté until tender-crisp.
- Stir in rice, soy sauce, salt, and pepper. Toss everything well.
- Garnish with spring onions and serve hot.
3. One-Pot Chicken and Veggie Stir-Fry
Ready in: 30 minutes | Serves: 2-3
Ingredients:
- 250g Boneless chicken (cut into small pieces)
- 2 cups Mixed vegetables (broccoli, carrots, bell peppers)
- 3 tbsp Soy sauce
- 1 tbsp Honey
- 2 Garlic cloves (minced)
- 2 tbsp Oil
- 1 tsp Cornstarch (mixed with 2 tbsp water)
- Salt and pepper to taste
Instructions:
- Heat 1 tbsp oil in a pan. Cook chicken until golden and fully cooked. Remove and set aside.
- Add the remaining oil, vegetables, and garlic. Sauté until vegetables are tender.
- Mix soy sauce, honey, salt, and pepper. Add the mixture to the pan with the chicken.
- Stir in the cornstarch slurry and cook until the sauce thickens. Serve with rice or noodles.
4. Cheesy Vegetable Quesadillas
Ready in: 15 minutes | Serves: 2
Ingredients:
- 4 Tortillas
- 1½ cups Shredded cheese (cheddar/mozzarella)
- 1½ cups Cooked vegetables (onions, bell peppers, corn)
- 1 tbsp Olive oil
Instructions:
- Heat a pan over medium heat. Place one tortilla in the pan.
- Sprinkle half the cheese over the tortilla, then add the vegetables, and top with more cheese.
- Cover with a second tortilla. Cook for 2-3 minutes per side until golden and cheese is melted.
- Slice and serve with salsa or sour cream.
5. Lentil Soup
Ready in: 35 minutes | Serves: 4
Ingredients:
- 1 cup Lentils (red or green)
- 1 Onion (chopped)
- 1 Carrot (chopped)
- 2 Garlic cloves (minced)
- 2 Tomatoes (chopped)
- 4 cups Vegetable broth
- 2 tbsp Olive oil
- 1 tsp Cumin
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot. Add onions, garlic, and carrots. Sauté for 5 minutes.
- Add tomatoes, lentils, cumin, and vegetable broth. Bring to a boil.
- Lower the heat, cover, and simmer for 25 minutes or until lentils are tender.
- Blend part of the soup for a creamier texture, or serve as-is.
